Let's Get The Ball Rollin'
Hey everyone!!!! This is our blog for the weight loss challenge. This is for all of us to share recipes, hints, do's and don'ts, what works and what doesn't and a whole lot more.
Hope you are all getting to the classes and doing to other things to get the pounds and inches off. This is only meant to be fun. This will be a great way to be accountable for all of us.
If you have some healthy recipes you would like us to share we can get them from you at Dream Chasers. Leave them at the desk.
I can't wait to see the success of all of you throughout the comming months. We are gonna look soooooo good by January.
I am just going to post one recipe today to keep it simple but look for more to come tomorrow.
Beef Minestrone Soup
1 tsp extra virgin olive oil
1 cup fresh chopped onion
1 medium garlic clove, minced
1/4 extra lean ground beef
4 cups fat free, unsalted beef broth
1 potatoe, fresh, peeled and chopped
1/2 cup fresh copped celery
1/2 cup chopped carrots
1/2 tsp dried basil
1/2 tsp ground oregano
1 pinch salt (or to taste)
1/4 tsp black pepper
15 oz kidney beans, drained
1 fresh shredded cabbage
2/3 cup pasta, macaroni, elbow, dry
2 TB grated Parmesan cheese
In a sauce pan begin browning hamburger, add onions and garlic, stir in broth, potato, celery, carrot, basil, oregano, salt and pepper. Cover and simmer 30 minutes.Stir in kidney beans, cabbage and macaroni, cover and simmer 10 minutes or until macaroni is tender. Serve and top with Parmesan cheese.
Makes 6 servings;calories 233,total carbs 37.8 g, dietary fiber 11.5 g, sugars 9.5 g, Total fat 2.7 g, unsaturated fat 1.7 g, potassium 847.7 mg, protein 15.6 g, Sodium 199 mg.
